One of our favorite restaurants here in our area used to have an appetizer on their menu with this feta sauce and pickled vegetables and it was one of my favorite things EVER. When COVID hit and many restaurants were forced to close, I wanted to figure out a way to make my favorite thing so I started playing around to see if I could figure it out.
After a couple rounds of trial and error I came up with this recipe! It isn’t exactly the same, but it is just as delicious! I wasn’t trying to rip off their recipe anyway, but to make it my own to share and enjoy.
It is super simple to put together and can be done super quickly if you have unexpected guests that you want to impress. You literally toss all the ingredients in your Food Processor until it is creamy, put it in a cute little Ceramic Ramekin, top with a little more olive oil and some spices and herbs and you are set! It is all of the ingredients in a typical hummus but instead of chickpeas, you use cheese! So technically this recipe is KETO friendly! What a bonus!
For the garnish, I drizzled with a little more olive oil, some toasted cumin and coriander seeds that had been crushed, red pepper flakes and a little bit of feta crumbles for color. You could also do Za’atar seasoning, sesame seeds, fresh herbs, lemon zest, the possibilities are endless as far as garnish goes for this delicious dip so use your imagination and top with whatever you like!
It is so great served with pickled vegetables, crusty bread, or crackers if you want to enjoy it as a dip. We also used it as an ingredient in a couple dinners! We used it with potatoes and chimichurri, that was amazing. We also used it on a wood fired octopus dish, THAT was a treat! My point is, it’s super versatile and doesn’t need to be just an appetizer. Toss it on your plate the next time you make lamb chops, you won’t regret it!
Try it with these other delicious recipes!
I hope you put this out as an appetizer for your next dinner party or add it to your next mediterranean dish or meal. It is salty and tangy and everything that I love about feta cheese but in a creamy spreadable application and I hope you all love it as much as I do!
