Preheat your oven to 350°F
In your food processor, place your pecan halves and pulse until they are roughly chopped.
Add in your cubed butter, flour, salt, vanilla and ¼ cup powdered sugar. Pulse to combine until the mixture resembles wet sand. The mixture will look dry but should come together when you squeeze it in your hand. If it is too crumbly, continue to pulse until the dough comes together when pinched.
Using a cookie scoop, scoop the mixture and pack it in to the scoop. Release the dough into your hand and roll into a tight ball. Repeat with the rest of the dough. Place on a lined baking sheet, they can be close together because the dough should not spread during baking.
Bake your cookies for 9-14 minutes until the dough is just set, before it begins to brown.
Let your cookies cool for a couple minutes until you can handle them, then roll each cookie in the remaining powdered sugar. This step needs to be completed while the cookies are still warm. Enjoy!
