Thai Style Green Curry Paste
Spicy and delicious green curry paste to use on meats, soups and stews.

- 3-6 Green Chilies (Fresno, Jalapeno, Serrano) The more you use, the spicier it is!
- 6 Scallions Roughly chopped
- 2 Stalks Lemongrass Cut into 1" pieces
- 2 Inches Ginger Peeled
- 1 Med Shallot Peeled
- 4 Clove Garlic Peeled
- 4 Kafir Lime Leaves OR 2 Bay leaves + Zest of 1 Lime
- 1 Lime Zest and Juice
- ½ Tsp Salt
- ¼ Tsp Pepper
- ½ Tbsp Cumin
- 3 Tsp Fish Sauce
- 1 Bunch Cilantro stems and all
Place all ingredients into your food processor and blend until a paste is formed, making sure to scrape down the sides for even blending.
Store in an airtight container for up to a week!
