Easy, Weeknight Lemon Dill Salmon Bake

In the summer I am always looking for quick dinner ideas. Something about the sun being out for longer makes me want to be outside enjoying it, not spending time inside cooking!

This recipe is inspired by my dad who made something very similar for us a while ago. I was hooked after the first bite! Not only was it super easy to make, but it is just BURSTING with flavor!

To make this dish, you need just a few simple ingredients: Lemons, Dill, Capers, Sour cream, and of course the side of salmon!

Selecting your Salmon

For this recipe, I like to use a side of salmon rather than portions but you can use whatever is available. I like to look for a lean, preferably wild caught salmon with the pin bones and skin removed. You should be able to find it at your local grocery store or butcher in the seafood area or, if you have a Costco membership, that is where I like to purchase my sides of salmon. You can use either frozen or fresh salmon depending on what is available to you. If you have access to fresh salmon, I would definitely lean in that direction!

Let’s Get Cooking

Making this recipe is super simple, just takes a bit of knife work! It is important to cut your lemons into as thin of slices as you can manage. If you have a mandolin, you could use that to make sure they are all consistent. To help make the lemons a bit easier to cut, I recommend refrigerating them before cutting. This will make the lemons firm up and be a little easier to slice thin.

Now that our lemons are sliced, we need to make the creamy sauce. Slightly chop up the dill and capers and add them to a bowl with the sour cream and lemon zest. Mix that up and we’ve got our sauce!

Next thing you need to do is lay out your salmon on a lined baking sheet. Season the side of salmon with salt and pepper and then make a layer of sliced lemons. With your oven set to broil, cook the salmon with the lemon slices for 7-10 minutes, depending on the thickness of your salmon. Take the salmon out and spread on the sour cream mixture in an even layer, then return to the oven. Broil for an additional 5-7 minutes, remove from the oven and you are ready to serve!

The sour cream serves as the sauce for the dish as well as adding a punch of flavor! This meal is filled with healthy fats and Omega 3’s! I like to serve the dish with rice, salad, or grilled vegetables for the perfect summertime meal!

Ingredients
  

  • 2 LB Salmon
  • pinch Salt
  • ½ Cup Sour Cream
  • 2 Tbsp capers
  • 2 Tbsp Dill
  • 2 Tbsp Lemon Zest
  • 1-2 Lemons Sliced Thin

Instructions
 

  • Turn on your oven to broil.
  • In a mixing bowl, combine chopped capers, dill, lemon zest and sour cream.
  • Slice lemons as thin as you can manage, If you have a mandolin, you can use cold lemons and carefully cut them thin.
  • Place your salmon on a lined sheet pan and season with salt.
  • Add a thin layer of lemons on top of the salmon and place in the broiler for 5-7 minutes, until the lemons just start to cook.
  • Remove from the oven and spread the sour cream mixture over the lemons. Put the salmon back in the oven and broil for an additional 5-7 minutes until the sauce is set and the salmon is cooked through.
  • Allow to cool for 1-2 minutes before you slice into portions and enjoy!
