Fresh Herb and Yogurt Dressing

I think I’ve done it. I have created the most addicting salad EVER! Now, I don’t want you thinking that I am a “salad Girl” and I am over exaggerating. This is not a drill. Once you have this dressing you will crave it!

The dressing is the true star of this salad and the focus of this recipe. It is PACKED with fresh herbs, lime juice and just a touch of yogurt. It is like a cross between a green goddess and yogurt ranch. How can you go wrong with that??

Making the Dressing

The dressing itself is easy enough to make, you just need to have a good blender like a Vitamix anr Ninja. If you don’t have one of those, DONT WORRY! It will be ok, your dressing might just be a little less smooth, but the flavor will still be great.

To make the dressing, place all of the ingredients into your blender and blend until smooth. You might have to scrape down the sides a couple times to make sure everything gets fully incorporated. If you are finding that it is too chunky, you can add some water 1 tbsp at a time, until the mixture comes together. Once the dressing is made, it can be stored in a container in the refrigerator for up to a week.

What about the toppings?

For this salad I change up the vegetables, but I always have these three ingredients: Feta cheese, Grilled steak, and crispy chickpeas!

Making crispy chickpeas is super simple and the cool thing about them is you can season them with whatever spices you like! I like to use paprika, garlic and salt for mine. To make them, simply drain a can of chickpeas, no need to rinse, place them on a lined sheet pan and drizzle with a bit of oil. Bake the chickpeas at 375 for approximately 15-20 minutes depending on your oven. You want to make sure they are dried and crispy! When they are finished baking, toss your seasonings and you are ready to go!

For the steak, my favorite so far has been hanger steak, but really any steak will work. It also works very well with flat iron, new york, ribeye and sirloin but use whatever you can find!

Let’s Put it Together

To make this salad beautiful, I start with my greens and toss a bit of the dressing, just enough to coat the lettuce. Plate that up and top with whatever other vegetables you like, more herbs, feta cheese, crispy chickpeas and your sliced steak on top. Drizzle a little more dressing over your sliced steak and you are ready to enjoy!

Ingredients
  

  • 2 Cups Fresh Basil Leaves
  • ½ Cup Fresh Dill
  • 2 Limes Juiced
  • 1 Green Onion
  • 1 Clove Garlic
  • ¼ tsp Red Pepper Flakes
  • ¼ tsp Salt
  • ¼ Cup Olive Oil
  • ½ Cup Greek Yogurt

Instructions
 

  • Roughly Chop all ingredients into smaller pieces that fit in your blender
  • Place all ingredients in your blender and blend on high until smooth. You may need to scrape down the sides and blend again to make a creamy smooth dressing.
  • Store in an airtight container with a lid for up to 5 days.
