Over the holidays I spent time going through my family’s recipe books. I wanted to be sure I am able to let those recipes live on. As I was going through my Grandmother- in-Law’s immense amount of recipes, an artichoke dip caught my eye. The original recipe is basically what is below, but I thought to myself, “Self, wouldn’t this be even better with spinach and a little kick?” So I did that!
This recipe would be perfect to bring to a party, make as an appetizer for a lazy grazing day, or just any other time because its simple and delicious! I want to try it out in a bread bowl next.
Its a very simple appetizer to throw together, literally mix everything together, top with parmesan, bake and eat.
I’m definitely planning on making this for the next big football party!
Warm Spinach and Artichoke Dip
Ingredients
- ½ package Frozen spinach thawed, drained and chopped
- 1 14 oz Can Artichoke Hearts not marinated
- 8 Oz Cream Cheese softened
- ¾ Cup Shredded Parmesan Cheese
- ½ Cup Mayonnaise I like olive oil mayo, but any will do
- 5 cloves Garlic minced
- ¼ tsp black pepper
- ¼ tsp salt
- ¼ tsp red pepper flake
- ¼ Cup Shredded Parmesan Cheese
Instructions
- Pre-heat oven to 350°F/176°C
- Combine all ingredients (minus the second parmesan) in a bowl and mix together until evenly mixed. You can do this in a mixer or by hand!
- Place mixture in and oven safe dish that you will use for serving, top with Parmesan cheese and bake for 45 minutes until parmesan is golden brown on the top
- Serve hot with fresh bread or crackers!
