Lucky Charms Bars with Bailey’s Ganache

Who doesn’t love that crunchy, chewy, crispy marshmallow that you only find in Lucky charms?! Nowadays, Lucky Charms cereal isn’t something that I eat for breakfast, it’s more of a dessert for me. I thought they would make super fun nostalgic rice crispy treat, style bars. So that’s what I made! The base of the recipe is very similar to your standard rice crispy mix that uses marshmallows, butter and cereal but the thing that makes these stand out even more is the addition of a white chocolate Bailey’s ganache!

Bailey’s is an Irish cream liqueur that has a sweet flavor that is hard to replicate.

Lets get cookin’!

Making the Treats

To make these tasty treat bars you’ll need a pot or mixing bowl and a spatula. In your pot you’re going to melt together the butter and marshmallows until they form a sauce. That sauce gets poured over your cereal in a large mixing bowl and stirred together until everything is nice and gooey and combined . Here’s a trick to help alleviate some sticky mess – before you mix your sauce, spray your spatula with a generous helping of pan spray! This will keep the marshmallow from sticking to your spatula and you’ll be able to use it to mix your treats a lot easier with a lot less mess. Once your cereal is mixed, press it into your greased pan. I used an 8 x 10 pan however an 8 x 8 or 9 x 9 square would work just fabulously. I put mine in a smaller pan so that the treats would be thicker. If you want thinner treats cut into more squares, you could use a larger pan – totally up to you!

Making the Ganache

To make the white chocolate, Irish cream, ganache heat, your heavy cream, and Irish cream in a pot until it just starts to bubble, you do not need to bring it to a full boil. In a mixing bowl, place your white chocolate chips and pour over the hot liquid . Let it stand for just a minute to melt the chocolate then using a whisk mix it together to create a silky, smooth sauce.

To assemble the treats, press them into your preferred pan. I separated out a handful of extra Lucky Charms marshmallows to sprinkle over the top. Using a spoon, or a squeeze bottle, drizzle your ganache over the top of the cereal treats. If the ganache is too warm it will settle to the bottom of the pan, so you want to make sure your sauce is room temp and a little bit thick. If your ganache does sink to the bottom of the pan, it’s not a big deal. It’s gonna be delicious either way! Sprinkle the extra marshmallows and colorful sprinkles if desired over the top of your drizzled ganache and let the treats set up for at least 10 to 15 minutes. Cut your treats into your desired size and you are ready to serve!

Equipment Used

These treats are best consumed within the first two days of making. The cereal will start to lose its crispiness if you hold them for longer than that, so I suggest making these treats on the day you are planning to enjoy them.

Ingredients
  

For the Lucky Charms Bars

  • 4 Tbsp Butter
  • Cups Mini Marshmallows
  • 5 Cups Lucky Charms Cereal
  • Pinch Salt

For the Irish Cream Ganache

  • ½ Cup White Chocolate Chips
  • ¼ Cup Irish Cream
  • ¼ Cup Heavy Whipping Cream

Instructions
 

For the Lucky Charms Bars

  • Place the Lucky Charms cereal in a large mixing bowl.
  • In a medium pot over medium heat, melt together the butter, mini marshmallows and pinch of salt, mixing constantly, until a sauce is formed.
  • Pour the melted sauce mixture over the cereal and mix to combine. This can be made easier by spraying your spatula with cooking spray so the mixture doesn't stick!
  • Press the mixture into a greased 8×8 or 9×9 pan. (or whatever size you want)
  • Set aside to cool.

For the Ganache

  • Place the white chocolate chips in a mixing bowl and set aside.
  • In a small pot heat the heavy cream and Bailey's until it just starts to bubble. It does not need to come to a boil, just get hot.
  • Pour the hot liquid over the white chocolate chips and let it stand for 30 seconds to melt the chocolate. Stir to combine to a sauce.

Assembling the Treats

  • Now that the treats have cooled, use a spoon or squeeze bottle to drizzle ganache over the treats. Top with extra Lucky Charms Marshmallows, colorful sprinkles, or both.
  • Cut your treats into your desired size and you are ready to serve!
  • I recommend consuming the treats within the first two days you make them. The cereal does not hold well for long periods of time. Enjoy!!
